Degustation notes

EYE
Rich golden color with orange highlights.

NOSE
Fresh apples, cinnamon and spice, with a hint of honey.

PALATE
Opulent, intense and complexly flavored; evocative of fine ice wines or Sauternes. Its sweetness is exquisitely balanced by acidity that keeps it from being cloying and makes for a clean finish.

SERVING SUGGESTIONS
Serve well chilled (5°C). Enjoy as an aperitif, with foie gras, fine cheeses, a variety of desserts, or on its own to end a perfect meal.

It's a fact that ice cider is unequaled when it comes to pairing with deserts that are apple-based, caramelized or spiced. Its electrifying liveliness and its candied fruit and caramel flavours harmonize perfectly with this type of dessert. Sugar not your thing? Then allow yourself to be carried off to paradise by the light and delicate bubbles of the original 2003 Domaine Pinnacle Sparkling Ice Cider. This excellent ice cider producer has innovated in bringing to market a sparkling ice cider. Dark, orange-tinted in colour, it is lightly sprinkled with very fine bubbles. The nose is very rich and complex, marked by the scents of very ripe and candied fruits. It is substantial and full - even round - in the mouth, due to the sparkle that gives it a light, airy character and diminishes the impression of sweetness.

4 stars The Domaine Pinnacle, Cidre de Glace Petillant, 2003... is the first of its style - a sparkling ice cider - that I have tried and I must admit it makes a good contribution to a festive occasion. It has an elegant apple-calvados nose while on the palate it has sweet apple flavours enhanced by its excellent balancing acidity and exciting bubbles.
